INGREDIENTS:

(use what ever quantities you have or require)

Potatoes
Garden Peas
Mint (chopped)
Basel (chopped)
Parsley (chopped)
Olive Oil
Garlic (chopped)

METHOD:

  1. Boil the potatoes until they are cooked through but still firm
  2. In a bowl add the peas, chopped herbs and garlic and stir together with a drizzle of oil
  3. Add the potatoes to the bowl and stir until coated
  4. Serve
